This place cooks mexican dishes where the most representative of Puebla stand out. For the past 12 years, chef Gerardo Quezadas has been organizing a “chiles en nogada festival” in which he presents new recipes that you can try from July to October.
This edition will have 12 different chiles that are inspired by the classic recipe. Among them is the buffalo meat 🐃 with a generous nogada bath with walnuts, almonds and goat cheese. The touch of pomegranate and parsley is not missing in the dish.
delicious? It is. In fact, we were surprised that it is not too strong a flavor that attacks the palate. On the contrary, it is a subtle experience that is worth trying. As for the portion: reasonable and will leave you satisfied.
The chef told us that there are many diners who do not enjoy the combination of sweet and savory. So he decided to create a savory recipe. It has capers, olives, walnuts and a pistachio sauce. Instead of pomegranate, use dehydrated piquín chile, but be careful! It’s very spicy, so we don’t recommend it if you’re not a fan of spicy food.
