Have you ever wondered how to make the chocolate powder or bar that you love? Tan Cacao is a chocolateria in Santa María la Ribera that shows you the elaboration process with native cocoa from Chiapas. While you learn something new, you will taste delicious chocolates in different versions.
This project inaugurated its establishment in February 2024, however, it has been producing cocoa and turning it into chocolate for more than a century. In this store you will find cold drinks and hot, cakes chocolate-covered fruits, sweet bread and more. 😋
Tan Cacao gives an added bonus to the experience of simply eating chocolate: learning about its elaboration and cultivation processes. It should be noted that the cocoa they use is from Cacahoatán, a region of Chiapas that is rich in criollo cocoa.
This family project was born in 1904 with a farm called La Rioja, which since then has been supplying chocolate to leading restaurants and business in Mexico. Today, the production and sale of chocolate (in a physical store) is the work of Pablo Mugüerza, who has continued the legacy of his great-grandfather Moises Mugüerza.

A pair of machines from 1915 and 1925 are kept at Tan Cacao; they have belonged to the Mugüerza family for over a hundred years! Believe it or not they still produce the chocolate sold on site. They are located at the entrance of the establishment, so it is a delight to see how the chocolate is made, while you discover some curious and surprising facts.

In this chocolate shop there are tables for you to enjoy a beverage or dessert do yourself a favor and try the mango enchilado with chocolatey topping 🥭. The best thing is that you can bring some bars, as well as chocolate powder.
